My Story
Hi! My name is John McFetridge and I was born and raised in Leeds in the UK. I have been a private chef and professional caterer for over 25 years and have had the opportunity to work in many countries including Switzerland, France and Australia. My experience of the catering and hospitality industry is diverse, ranging from chef roles in small restaurants, boutique hotels and larger hotel chains to management in corporate and private hospitality at prestigious events including the Rugby World Cup, Royal Ascot, the Ryder Cup, the 2012 Olympic Games, and more recently the FIFA World Cup in Qatar.
From December - April I am based in Courchevel, France where I manage Mountain Relish - a team of freelance private chefs that provide high end catering services in the resort's most luxurious chalets. The rest of the year you will find me based between my two favourite places...the beautiful Languedoc Region of south west France and my favourite City, Palma de Mallorca
My Cuisine
Above all, I believe that food should be uncomplicated, tasty and made using the highest quality seasonal ingredients, which explains my passion for the cuisine of the Mediterranean. I am also a big fan of Thai, Vietnamese and Indian dishes and adore cooking anything with aubergines. I bake sourdough when I need to relax or should be doing more important things and I think that flowers are better in a vase on the table than on the plate ;)
When the apron is off
In the summer I love hiking in the Serra de Tramuntana and canoeing in the River Orb. I enjoy a game of tennis, a round of golf and riding my old Suzuki SV650. In the winter, if I am not in a chalet kitchen, you will find me on the slopes of the Three Valleys ski area.
